Chocolate Soy milk
Great postmenopausal drink and recommended for any busy person.
* 8 oz. Organic Chocolate Soy Milk
* 3 Tbsp ground flaxseed
Add flaxseed to soy milk with small wire whisk. Add 3 - 4 icecubes. Stir. Drink through straw. Excellent!
Hearty Pancakes
* 1 cup old fashioned oatmeal
* 1/2 cup white flour
* 1/2 cup buckwheat
* 1 Tblsp baking powder
* 2 Tblsp flax seed
* 1 cup skim (or soy) milk
* 2 Tblsp applesauce
* 4 egg whites
Optional ingredients: 1 Tblsp Sugar, 1 tsp. salt, 2 eggs replace 4 eggwhites.
Combine dry ingredients, Combine and add liquid ingredients. Stir gently and pour into lightly buttered skillet. Turn when bubbles break, Cook until slightly browned. Serve with fresh blueberries for tasty breakfast!
Kenyan Peanut and Meatball Casserole
* 1 cup of fresh Virginia Peanuts **
* 1 lb. lean ground turkey meat
* 1 tbsp. olive oil
* 1 half cup of flax seed
* 1 stalk of celery -diced finely
* 1 half cup of diced sweet onion
* 1 tsp. of herbs de france
* 12 red baby potatoes
* 1 egg
* 2 med. diced carrots
* 1 cup chicken boulion
* 1 can of tomato paste
* 1/4 cup of ketchup
* 1 can of boiled tomatoes
* 4 large diced cloves of garlic
* 1 bell pepper diced
* 1 tsp of green chile or red
0ptional - 1/2 tsp. of corn starch, 1 tsp. fine black pepper
For meatballs: Place into mixing bowl the ground turkey, the egg, the onion, celery and 1 clove of garlic - all finely diced. mix in olive oil and 1/2 cup ground flax seed, mix and blend to make meat balls.
Using water dipped hands roll out 15 to 20 medium sized meatballs and fry in olive oil sprayed pan. When meatballs are browned, drain on paper towel covered plate. refrigerate for 1 hour.
Casserole: Place 2 - 3 cups of water in pot to par-boil potatoes, whole - with skins for 20 minutes - drain and set aside. Place into large casserole pan diced carrots, bell pepper, 3 sliced of cloves garlic.
For mix into a bowl - boulion, tomato paste, diced boiled tomatoes, ketchup, all herbs, hot pepper, corn starch and mix well and add to casserole pan.
(**Tasty - peanuty: 1/2 cup of chunky peanut butter is offen used as substitute for whole peanuts - simply mix/blend into tomato sauces).
Add in meatballs with red potatoes on top layer of casserole - for further browning later under broiler - Cover casserole pan with tin foil - Preheat oven at 400*
Oven: Set oven at 425* and bake for 45 min. take off foil and broil- brown top (using broiler setting at high for additional15 min). Serve hot on bed of brown rice or alongside string beans.
MAG's Breakfast Cookies
In large bowl combine well:
* 1 1/2 cups whole-wheat pastry flour
or oat flour
* 1 teaspoons baking soda
* 1 Teaspoon salt
* 1 1/2 teaspoons cinnamon
* 1/2 teaspoon nutmeg
* 2 cups whole oats (ground-up in blender)
* 1 cup golden flax seed (ground up)
In another bowl combine well:
* 1/2 cup olive oil
* 1/4 cup water
* 2 eggbeaters
* 3/4 cup honey
* 1/4 cup pure maple syrup
* 1/4 cup water or juice
* 1 teaspoon almond extract
Add this mixture to dry ingredients and stir well. Then add:
* 2 more cups of whole oats
* 1 cup chopped walnuts
* 2 cups raisins
Mix well and drop by heaping 1/4 cup cups full on greased (use Pam) cookie sheet (9 cookies to a pan). Flatten cookies by hand (I wet my fingers first, as it helps lessen the stickiness)
Bake for 18 minutes, or until browned in 400-degree oven. Recipe makes a total of 18 cookies. I eat one cookie every morning for breakfast. Remove from pan when done and freeze in baggies. I like to eat my cookies frozen!
Flax Pancakes
* 1 1/2 cups unbleached flour
* 1/2 cup ground flax seed
* 1 egg equivalent egg substitute
* 2 cups milk
* 1 Tbsp sugar
* 1 Tbsp canola oil
* 1 Tbsp lemon juice or vineger
* 2 tsp baking powder
1. Combine all the ingredients together. 2. Heat the pan at medium setting, spray butter-flavored oil.
3. Pour 1 cradle full of pancake mix.
Flip when bubbles start to appear.
4. Cook the other side until it turns golden brown.
5. Enjoy with a margerine that has no transfat (butter), with honey or jelly
of your choice! (maple syrup, fruit)
Servings: 3 (2 pancakes each person)
Oatmeal Concoction
I've been calling this recipe my oatmeal concoction for lack of a better name. When people at work see or smell it, they ask me about it. I give them a spoon of it and everyone has fallen in love with it.
* 1/2 Cup old fashioned oatmeal
* 3 tablespoons ground flaxseed
* 1-2 tablespoons dark brown sugar (lightly packed)
* handful of slivered almonds
* 2 tablespoons extra virgin olive oil
* 1 apple cut into chunks.
Mix everything together. Microwave 4 1/2 minutes. Stir and let sit for 5 minutes. (It has the consistency of crumbles on apple crisp)
Savor every bite!
Flaxseed Meatloaf
* 2 Lbs. Ground Beef
* 4-5 Eggs
* 1/2 Cup Milk
* 4 pieces torn white or wheat bread
* Salt & Pepper
* Onions (lots!)
* 1/2 Cup Flaxseed (milled)
* Poultry Season to Taste
Bake in an oiled baking dish @ 350 for 90 minutes
Delicious!
Flaxseed Fruit Salad
* 3 Bananas
* 2 Sweet Apples
* 3 Kiwi Fruits
* 6 Big Strawberries
* 1/3 Cup Raisins
* 3 Tbsp. Chopped and Roasted Almonds
* 1/2 Cup Flaxseed
* 1/2 Cup Fresh Orange Juice
Cut all fresh fruit into little pieces. Add raisins, almonds, flaxseed and orange juice. Mix well and enjoy this heavenly meal.
Tasty Flaxseed Waffles
Start with 4 eggs, whites separated and beaten - 2 yolks used and 2 yolks thrown away.
* 1/2 cup canola oil
(If you have a good non-stick iron you may substitute 1/4 cup applesauce and 1/4 cup canola oil for the 1/2 cup canola oil)
* 1 cup milk
* 3/4 cup cottage cheese (2% small curd)
* 1 cup whole wheat flour
* 1/2 cup soy flour
* 1/4 cup ground oats
* 1/4 cup white flour
* 1/4 cup milled flaxseed
(more can be sprinkled on top of batter after poured into iron)
* 1/4 to 1/2 cup finely chopped walnuts
* 4 teaspoons baking powder
* 1/2 teaspoon salt
Mix liquids together, mix dry ingredients together and add altogether. Fold in the egg whites and cook on your waffle iron. Enjoy!
Flax Corn Muffins
* 1/2 cup all-purpose flour
* 1/2 cup whole wheat flour
* 1/2 cup ground flaxseed
* 1/2 cup yellow or white cornmeal
* 1/4 cup sugar
* 2 tsp. baking powder
* 1/2 tsp. salt
* 1 cup skim milk
* 1/4 cup vegetable oil (any flavor)
* 1 egg whites or on egg beaten
Heat oven to 400 degrees and grease an 8 or 9 inch pan. Stir in milk, oil and egg, mixing just until dry ingredients are moistened. Pour batter into prepared pan.
Bake 20-25 min or until golden brown and toothpick inserted into center comes out clean and serve warm. Makes 9 servings. You can also add nuts, raisins, cut apple, or chocolate chips to this recipe. Just let your imagination go wild. For mexican corn bread just add a 4 oz can of green chilies, 1 cup of drained whole kernel corn, and 1/2 cup of grated cheddar cheese. Yum!
Recipe for Flax Seed/Apple Pancakes
* 2 large cooking apples, peeled if desired, and finely chopped (about 1 1/2 cups)
* 2 teaspoons lemon juice
* 1 cups whole wheat flour
* 1/2 cup of ground flax seeds
* 2 tablespoons sugar
* 2 teaspoons baking powder
* 1/2 teaspoon ground cinnamon
* 1/4 teaspoon salt
* 1 slightly beaten egg
* 1-1/2 cups milk
* 3 tablespoons cooking oil or melted butter
Delicious Cherry Flax Bread with Oranges
*1 cup of dried cherries (whole or chopped)
*? cup pureed berries (Pulse ? c fresh or frozen strawberries or blueberries in the blender a few times)
* 1cup whole wheat flour
* 1 ? cup unbleached all purpose flour
* ? cup ground flax seeds
* 18 packets of stevia or ? cup of sugar
* 2t aluminum-free baking powder
* 1t baking soda
* ? t sea salt
* 2 t orange zest
* 1 egg lightly beaten
* ? cup canola oil or butter
* 1? cups of freshly squeezed orange juice (4-6 oranges depending on size and juiciness)
(Optional: save pulp of the orange for spreading over top of hot bread once it is removed from the oven. See note below.)
Grease bread pan(s). Preheat oven to 375. Mix together in a small bowl: cherries, 6 packets of stevia or ? c of sugar, a few pinches of aromatic cardamon seeds, and the pureed berries. large bowl.
Set aside. Sift dry ingredients, including the remaining 12 packets of stevia or ? cup of sugar together into a Add orange zest. Beat together egg, canola oil (or butter) and 1? cups of orange juice in a medium size bowl. Add wet ingredients to the larger bowl of dry ingredients. Blend until dry ingredients are integrated and moist. Fold in the reserved bowl of cherries, stevia, seeds and pureed berries. Fill 3 mini bread loaf pans or 1 loaf pan sized 8 1/2" x 4 1/2" with the batter to ? full. Bake at 375 for 30 - 40 minutes.
Desert a la Joyce
* 3/4 cup 0f fat free or part skim ricotta cheese
* 1/2 cup sugar free jello (ready made cups in dairy or make your own. I like orange or lime
* 2 tbs BRUSH CREEK'S ORGANIC GOLDEN FLAX SEED (ground)
* 1/4 tsp cinnamon
* A good size "squirt" of dairy light whipped cream.
Combine well all of the ingredients in a bowl except whipped cream. Add the whipped cream and fold it in. Serves one ( and with absolutely no guilt...have it every nite!! "Delish"
Magic Bananas
* 1-1/2 Cups milled flaxseed *Bananas, *Dark chocolate
Bananas, rolled in dark chocolate and then rolled in flaxseed, put them in the freezer on wax paper and what a treat, and the kids love them. My 8 year old son's favorite way to eat flaxseed (with chocolate, of course). :) We also sprinkle it on every ceral he eats and in his oatmeal with a little splash of maple syrup, in his smoothies and in his yogurt. LOVE IT!!! I love the nutty flavor.
Healthy Breakfast Drink
* Soy milk or water
* 1/4 cup ground flax seed
* 1 cup whey protein
* Strawberries or Blueberries
* 1000 mg Vitamin C
Mix together in a blender and enjoy a heathy breakfast!
Super Potent Flaxseed Muffins
This recipe, taken from the March 2002 issue of Health 'N Vitality, was used in a study on flaxseed and breast health.
This recipe yields 7 muffins, each muffin containing 25 grams of flaxseed.
* 5/8 cup (150 ml) all-purpose flour
* 3/4 cup (180 ml) ground flaxseed
* 3/8 cup (90 ml) brown sugar
* 1/2 Tbsp (8 ml) baking powder
* 1/2 tsp (3 ml) nutmeg
* 1/2 tsp (3 ml) cinnamon
* 1 1/2 cup (360 ml) skim milk
Bake Muffins at 350F for 30 minutes.
Enjoy!
Bolivian Flaxseed Beverage
I remember my Grandmother preparing this wonderful flaxseed beverage which I want to share with you.
This recipe yields 4 glasses.
* 12 Tbsp roasted flaxseeds
* 12 Tbsp sugar (optional)
* 4 tall glasses bottled spring water
* Lemon Juice
On medium heat, carefully dry roast flaxseed for about 1 - 1.5 min. stirring constantly with a wooden spoon until seeds start opening up. Immediately cover pan and shake carefully until time is completed or until seeds are dark roasted color.
Transfer roasted seeds into a ceramic container and let cool.
On medium-high heat, blend six tablespoons flaxseed with one glass water and six tablespoons sugar for one minute. Pour in the second glass of water and blend another min. or until liquid becomes milky in color.
Pour through a colander and serve in tall glasses with ice and a few drops of lemon juice. Repeat procedure with other half of the ingredients. Enjoy!!!

Power Oatmeal
Not just for breakfast, and I find this recipe will stay those between meal munchies.
* 1/2 cup raw oats
* 3 Tbsp ground flaxseed
* 2 tsp oat bran
* 1 handful raisins
* 1 handful walnut pieces
* cinnamon & nutmeg to taste
* 4 Tbsp pure maple syrup
* Stevia to taste
* 3/4 tsp sea salt
Pour boiling water over mixture and mix well. Add Silk soy milk to your preference and enjoy.
